Trouble with Check/Money Order Sales

For my website, www.crittergiftshop.com, we have set up our emart cart to accept check/money order payments through the offline payment option.

In testing this payment option, I receive an email with the information about the person's order, but it does not include shipping information, payment for shipping or what the shipping option chosen was. We need this information in order to get the products to the customer. Is there something I am missing when setting up the Check payment option?

Is there any way that the shipping information could be included with the order information instead of having to email the customer to ask for their address and shipping choice all over again?
